Ingredients:
- 1 box 3
- 4 oz pistachio instant pudding mix
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios
Instructions:
Preheat the oven to 350F 175C
Line baking sheets with parchment paper
In a mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy
Add the pistachio pudding mix and beat until well combined
Beat in the eggs, one at a time, and then add the vanilla extract
Mix until smooth
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Stir in the white chocolate chips and chopped pistachios
Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely
