Ingredients:
- 1 lb chicken breast, diced
- 8 oz mushrooms, sliced
- 8 oz pasta such as penne or fettuccine
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Warm up the olive oil in a big pan over medium-high heat
After you add the diced chicken breast, cook for about 5 to 6 minutes, or until all sides are browned
Slice the mushrooms and mince the garlic and add them to the pan
For about 5 minutes, stir the mushrooms every now and then until they are soft
Heavy cream and chicken broth should be added
Bring to a low boil
Add the pasta to the pan and stir it around a few times
Cook for about 12 to 15 minutes, or until the pasta is soft and the sauce has thickened
Add grated Parmesan cheese and mix it in until it melts and is well mixed in
Add pepper and salt to taste
Add chopped parsley as a garnish before serving
