Chicken Scallopine is a classic Italian dish featuring tender chicken breasts cooked in a savory lemon-caper sauce. It's a quick and easy recipe that's bursting with flavor, perfect for a weeknight dinner or entertaining guests.
Ingredients:
- 4 chicken breast halves, pounded to 1/4-inch thickness
- Salt and freshly ground black pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
Instructions:
Add salt and pepper to both sides of the chicken breasts
Season chicken breasts and then coat them in flour
Shake off any extra flour
In a big skillet, heat the butter and olive oil over medium-high heat
This will take about 4 minutes per side
Cook the chicken in the hot pan until it is golden brown and no longer pink in the middle
Take the chicken out of the pan and set it aside
Add chicken broth to the pan and scrape up any browned bits on the bottom
Add the capers and lemon juice and stir them in
Cook for about two minutes, or until the sauce is slightly thinner
Put the chicken back in the pan and cook for two more minutes, until it's fully heated through
Add chopped parsley as a garnish before serving
