Ingredients:

- 5 lbs boneless, skinless chicken thighs, diced
- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes, undrained
- 4 cups chicken broth
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 cup shredded cheese optional, for serving
- Sour cream optional, for serving
- Avocado slices optional, for serving
Instructions:
Place diced chicken, bell pepper, onion, and garlic in the crock pot
Add diced tomatoes, chicken broth, cumin, chili powder, paprika, dried oregano, salt, and pepper
Stir to combine
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender
Before serving, stir in fresh cilantro and lime juice
