Ingredients:
- 1 cup wild rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Run cold water over the wild rice to clean it
Bring vegetable broth to a boil in a medium-sized saucepan
Cover the boiling broth with wild rice and turn down the heat to low
Let it cook on low heat for 45 minutes, or until the rice is soft and the liquid is gone
Warm up the olive oil in a big pan over medium-low heat
Put in the minced garlic and chopped onion
Saut until the onions are soft
Place the mushroom slices in the pan and cook them until they soften and release their juices
Add the dried thyme and rosemary, along with the cooked wild rice
Add pepper and salt to taste
Cook for another 5 minutes, stirring every now and then
Before serving, sprinkle with fresh parsley
