Ingredients:
- 2 cans 15 oz each chickpeas, drained and rinsed
- 3 celery stalks, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme leaves
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
Put the celery, red onion, parsley, thyme leaves, and chickpeas in a large bowl
Add the olive oil, lemon juice, minced garlic, salt, and pepper to a different small bowl, and mix them together using a whisk
To make sure everything is covered, pour the dressing over the chickpea mixture and toss it around
Put the salad in the fridge for at least 30 minutes with the lid on so the flavors can mix
Serve cold, and if you want, add more thyme leaves to the top
