Wheat Berry Salad with Orange Shallot Vinaigrette



The crunchy wheat berries, sweet cranberries, and tangy orange shallot vinaigrette in this Wheat Berry Salad with Orange Shallot Vinaigrette go so well together. This salad is healthy and tasty, and it goes well with lunch or dinner as a side dish.

Ingredients:

  • 1 cup wheat berries
  • 2 cups water
  • 1/2 cup dried cranberries
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 1/4 cup chopped toasted almonds
  • 1 orange, zest and juice
  • 2 tablespoons minced shallots
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Mixed greens for serving optional

Instructions:

Run cold water over the wheat berries and let them drain

Bring 2 cups of water to a boil in a medium-sized saucepan

Turn the heat down to low, add the washed wheat berries, cover, and simmer for 30 to 40 minutes, or until the wheat berries are soft but still chewy

Take out any extra water and let them cool down

Cooked wheat berries, dried cranberries, chopped parsley, chopped red onion, and toasted almonds should all be put in a large bowl together

Use a different bowl to mix the vinaigrette

Add the orange zest, orange juice, minced shallots, olive oil, red wine vinegar, salt, and pepper

Pour the vinaigrette over the wheat berry mix and toss it all together

Add more salt and pepper if you like

You can put the wheat berry salad on a bed of mixed greens if you want to
