Ingredients:
- 1 package tortellini
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can 15 oz white beans, drained and rinsed
- 1 bunch Swiss chard, chopped
- 1 can 14 oz diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
Follow the directions on the package to cook the tortellini
Remove the water and set it aside
Put olive oil in a big pot and heat it over medium-low heat
Put in the diced onion and cook until it turns clear
Add the minced garlic and cook for another one to two minutes, until the garlic smells good
Fill the pot with vegetable broth
Add the white beans, Swiss chard, diced tomatoes, oregano, and thyme
Use a stir to mix
