Tiny Red Potato Delight



Adding sour cream, chives, and crispy bacon to these small red potatoes turns them into a creamy, savory treat. It's great as a side dish or an appetizer at a party.

Ingredients:

  • 1 lb tiny red potatoes, halved
  • 1/2 cup sour cream
  • 2 tbsp chopped chives
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions:

Boil the halved red potatoes until tender, about 10-15 minutes

Drain and let cool slightly

In a mixing bowl, combine the sour cream, chopped chives, and crumbled bacon

Season with salt and pepper

Gently fold the cooked potatoes into the sour cream mixture until evenly coated
