Old South Coca-Cola Pork Loin



This Coca-Cola-infused Pork Loin will take you back to the Old South. This dish is a delicious mix of sweet and savory tastes. It's also Weight Watchers Smart Points friendly, so you can enjoy it without feeling guilty.

Ingredients:

  • 5 lbs pork loin, trimmed
  • 1 cup Coca-Cola
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground mustard
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch optional, for thickening

Instructions:

In a bowl, whisk together Coca-Cola, soy sauce, Worcestershire sauce, minced garlic, ground mustard, smoked paprika, salt, and black pepper

Place the trimmed pork loin in a resealable plastic bag and pour the marinade over it

Seal the bag and refrigerate for at least 2 hours or overnight for better flavor

Preheat the oven to 375F 190C

Remove the pork loin from the marinade and reserve the marinade for later

In an oven-safe skillet, heat olive oil over medium-high heat

Sear the pork loin on all sides until browned

Pour the reserved marinade over the pork loin and transfer the skillet to the preheated oven

Roast for 25-30 minutes or until the internal temperature reaches 145F 63C, basting the loin with the marinade halfway through

If desired, mix cornstarch with a little water to create a slurry

Stir the slurry into the pan juices to thicken into a sauce

Let the pork loin rest for a few minutes before slicing
