Fresh Broccoli and Vegetable Stir-Fry with Cashews



There is no oil or gluten in this fresh broccoli and vegetable stir-fry with cashews. It tastes great and is good for you. It's full of flavor and good for you, and it's perfect for a quick dinner during the week.

Ingredients:

  • 1 head of broccoli, chopped into florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snow peas
  • 1 carrot, julienned
  • 1/2 cup cashews
  • 3 tablespoons gluten-free soy sauce
  • 2 tablespoons maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup vegetable broth

Instructions:

In a big pan, put the vegetable broth and heat it over medium-low

It will take about one to two minutes after adding the garlic and ginger

Put the carrot, bell pepper, snow peas, and broccoli in the pan

Saut the vegetables for 5 to 7 minutes, or until they are soft but still crisp

Add the maple syrup and soy sauce and mix well

Add two to three more minutes of cooking

Toss the cashews around in the pan after adding them

Take it off the heat and serve right away
