Chicken Carbonara



Chicken Carbonara is a creamy and comforting pasta dish made with spaghetti, chicken, eggs, Parmesan cheese, and crispy pancetta or bacon. It's a delightful combination of flavors that is sure to please any crowd.

Ingredients:

  • 200g spaghetti
  • 200g chicken breast, thinly sliced
  • 100g pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Instructions:

Cook spaghetti according to package instructions until al dente

Drain and set aside, reserving 1/2 cup of pasta water

In a large skillet, heat olive oil over medium heat

Add diced pancetta or bacon and cook until crispy

Remove from skillet and set aside

In the same skillet, add thinly sliced chicken breast

Cook until golden brown and cooked through

Add minced garlic and cook for another minute

In a bowl, whisk together eggs, grated Parmesan cheese, salt, and black pepper

Add cooked spaghetti to the skillet with chicken and garlic

Toss to combine

Remove skillet from heat and quickly stir in the egg mixture, ensuring the eggs coat the spaghetti evenly

If the mixture is too thick, add reserved pasta water gradually

Return skillet to low heat and cook for another minute, stirring constantly, until the sauce thickens and coats the spaghetti

Sprinkle crispy pancetta or bacon over the top and garnish with chopped fresh parsley before serving
